Recipe Post | Thai Seafood Chowder

Ingredients

  • 2 tablespoon olive oil
  • ¼ cup diced onion
  • Salt and pepper
  • 2 stalks celery chopped
  • 1 jalapeño seeded and diced
  • 2 tablespoon green Thai curry paste
  • 3 cups chicken broth
  • 1 15- ounce can full fat coconut milk
  • 1 red pepper julienned
  • ½ head cabbage roughly chopped
  • 1 lb wild pacific cod cut into 1 inch chunks
  • ½ lb raw shrimp peeled and deveined
  • ½ lb raw calamari rings and tentacles
  • 2 tablespoon fish sauce
  • 2 tablespoon fresh lime juice
  • ¼ cup chopped fresh cilantro

Instructions

  1. In a large stock pot over medium heat, heat oil until shimmering. Add onion and a pinch of salt and pepper, and sauté until translucent, about 4 minutes. Add celery and jalapeño and cook until just tender, another 3 or 4 minutes.
  2. Stir in curry paste until fragrant, about 30 seconds. Add chicken broth, coconut milk, red pepper and cabbage and bring to a simmer. Cook 10 minutes. Add cod chunks, shrimp, and calamari and continue to simmer until fish is cooked through, 5 to 10 minutes more.
  3. Remove from heat and stir in fish sauce and lime juice. Add fresh cilantro just before serving.
